    Join Sabrina Hafner, MS, RD, LDN (UMass Dining), Sharniquia White, MS, RD, LDN (Spartan Dining at UNC Greensboro), and Tiffany Leon, MS, RD (FARE) for a discussion on allergen safety in campus dining.


    We’ll explore how campus dining staff confront daily operational challenges to ensure safety in high-volume environments, demanding attention to detail, transparency, and a culture of accountability. Rather than just discussing policy, the panelists will share successes and failures, pivots, and how they balance the tension between speed of service and student safety. We’ll show how dining directors, culinary leads, and dietitians actively bridge the gap between a written allergen policy and the physical plate of food to ensure the safety of the student.

    As FARE’s Asst. Director of Training and Professional Programs, Tiffany supports the development of educational materials and training programs for key target audiences, including registered dietitians or other healthcare professionals, commercial foodservice operators, and, of course, those with food allergies! Tiffany came to FARE from a college campus where she worked in dining services to help students with dietary restrictions navigate their dining options, served as a voice for the students during menu development, and provided food safety training to the campus dining staff. Before that, she was at a private nutrition and research firm that tailored holistic nutrition programs to boost physical and mental performance.

Sabrina collaborates closely with chefs, health promotion teams, academic partners, and the surrounding community to embed wellbeing into everyday dining experiences.

    Leading with resilience amid constant dining changes -- including challenges related to recruitment, retention, and decline -- requires adopting a "quick pause" moment, where managers take a step back to make proactive decisions rather than reacting in a knee-jerk manner. Key strategies include prioritizing well-being, embracing emotional intelligence, being transparent, and identifying a mental safe space.

    Undrey Bostic is a collegiate dining director, innovator, leadership strategist, mentor, and 21-year military veteran with an extensive background in leadership, policy, and community engagement.  He has served since 2013 in collegiate dining leadership across various universities including Georgia State University, Emory University, University of Georgia/4-H, and currently Georgia Institute of Technology where he oversees Residential Dining.

    A native of Georgia, Undrey previously served almost 22 years in the Army and Army National Guard having deployed twice to the middle east (Iraq and Kuwait), served in Europe and the Caribbean, and served on stateside assignments in multiple states.

    Undrey is active in both the professional and larger community. He has mentored with Newton Mentoring Inc with Newton County Schools since 2021. He serves as an elected member of the Staff Council at Georgia Tech, volunteering on the Employee Health & Wellness and the Compensation & Benefits committees. Since 2018, he has also been a Master Resilience and professional development trainer.

    Undrey holds an Educational Specialist (Ed.S) in Adult Education & Leadership from Regent University, a Master of Arts in Leadership from Luther Rice College & Seminary, and a Bachelor of Science in Public Safety from Mercer University. He is currently a Doctoral student in Adult Education and holds multiple certifications in leadership, human resources, logistics, and food service management.

He is the Associate Provost for Institutional Research & Analytics at Harvard University and a faculty member at the Harvard Graduate School of Education, where he teaches courses on the use of data in areas like strategic enrollment management. Before joining Harvard, Drew served as associate vice president of institutional data analytics at Georgetown University, where he led the Office of Assessment and Decision Support. He also taught and conducted research in higher education policy at NYU Steinhardt in his seven years as a fellow. 


    Prior to his work at Georgetown and NYU, Drew served as the executive director of the Initiative for Data-Driven Social Science at Princeton University, where he helped launch IDEAS for Higher Ed, a consulting group for internal analytics. In a previous role at the City University of New York (CUNY), he established an office devoted to integrated research, access to


    Drew’s research on higher education policy has appeared in several publications, including Research in Higher Education and New Directions for Higher Education. He earned his Ph.D. in higher and postsecondary education at New York University and an M.A. in quantitative methods in the social sciences from Columbia University.

    Evan received his business degree from the Dedman School of Hospitality at Florida State University in 2003.  He worked for Aramark at Florida State as the Catering Manager, coordinating large events including Doak Campbell Stadium skybox catering.  From Tallahassee, Evan moved to Macomb, Illinois, to take the role of Catering Director with Sodexo at Western Illinois University, leading the premier catering program in the area.  He worked with Sodexo’s national catering team to develop standardized recipes and brochures.  He is currently the Director of Dining at the Florida Institute of Technology, located on Florida’s Space Coast, and leads the Residential Dining and Catering programs.  He also heads up Campus Dining marketing efforts, Human Resource functions, and assists in numerous Student Government initiatives. He has two children just starting college.
